Last summer, my mom took out a container from the freezer with cauliflower to make a rice pilaf recipe. I was first a little surprised that it froze well, then shocked at how good it actually tasted. Cauliflower after all isnt known for its rich flavor. It has since become a staple when it comes to eating clean for dinner and knew I needed to share it with all of you!
Grated cauliflower | 1 Cup (16 tbs) | |
Extra virgin olive oil | 1/2 Teaspoon | |
Toasted slivered almonds | 1 Tablespoon | |
Garlic | To Taste | |
Salt and pepper | To Taste |
MAKING
1. In a pan heat olive oil. Add garlic and saute for a minute or till it turns fragrant. Add the cauliflower, season with salt and pepper to taste, add slivered almonds and continue to saute and cook for around 5 minutes.
SERVING
2. Serve the cauliflower rice with any main dish of choice.
TIPS
The cauliflower can be processed in food processor also.
