Potato Cauliflower au Gratin

Potatoes 1 Pound , peeled and diced
Cauliflower 1 Large
Butter 1 Ounce
Plain flour 1 Ounce
Milk 1/4 Pint
Vegetable stock 1/4 Pint (From Cauliflower)
Salt To Taste
Pepper To Taste
Mustard 1 Pinch
Grated cheese 3 Ounce
Paprika pepper To Taste
Chopped fresh parsley 2 Tablespoon (As Required For Garnish)



1) Preheat the grill.

2) Break the cauliflower into flowerets with some of the green leaves.


3) In a pan, cook the cauliflower and potatoes in boiling salted water until just tender.

4) Drain thoroughly and reserve 1/4 pint of the cooking stock.

5) In a large pan, melt the butter, stir in the flour and cook for 2 minutes.

6) Stir in the milk and reserved stock, stir and simmer until thickened.

7) Season with salt and pepper to taste.

8) Then stir in most of the grated cheese.

9) Blend the cooked vegetables and sauce; mix thoroughly.

10) In a heatproof buttered dish, transfer the mixture and sprinkle with rest of the grated cheese.

11) Place under a hot grill until the cheese is melted and browned

12) Sprinkle with paprika pepper to taste.


13) Garnish the Potato Cauliflower au Gratin with parsley and serve hot.
