Sriracha Roasted Cauliflower/ Fried "Rice" Cauliflower /Cauliflower Puree Recipes

In this video Carolyn shows three different recipes using Cauliflower which is also healthy.


Sriracha roasted cauliflower:
Cauliflower head 1 , cut and rinsed
Extra virgin olive oil 4 Tablespoon
Sriracha To Taste
Dried herbs To Taste
Seasoning To Taste
Fried rice cauliflower
Vegetable oil 4 Tablespoon
Sesame oil 2 Teaspoon
Cauliflower head 1 , cut, rinsed, and finely chopped
Low sodium soy sauce To Taste
Frozen mixed vegetables 3/4 Cup (12 tbs)
Garlic 2 Clove (10 gm) , minced
Grand diamond all purpose seasoning To Taste
Cauliflower puree
Low sodium chicken / vegetable broth 6 Cup (96 tbs)
Cauliflower head 1 , cut and rinsed
Seasoning To Taste
Butter To Taste (optional)
Sour cream/greek yogurt To Taste (optional)


For Sriracha Roasted Cauliflower:

1. Place a baking sheet in the oven, close the door, and preheat the oven to 450 degrees.

2. After rinsing the cauliflower, place it in a large bowl. Add the oil, sriracha, dried herbs and optional seasoning. Toss to coat.

3. Pour the cauliflower onto the hot preheated baking sheet, spread out to one layer. Roast for about 10 minutes. Give the cauliflower a toss and continue to cook for another 8 to 10 minutes.

4. Once done, serve as a hot or cold side dish.

For Fried “Rice” Cauliflower:

1. Preheat a large skillet over medium-high heat with the vegetable and sesame oils. About 2 to 3 minutes.

2. Add the cauliflower to the skillet and toss with a spatula or wooden spoon. Add soy sauce to taste, frozen vegetables, and garlic.

3. Taste for seasoning and add as desired. Toss until the cauliflower is at the desired tenderness.

4. Serve hot or cold.

For Cauliflower Puree:

1. Combine the stock and cauliflower in a large pot. Bring to a boil. Boil the cauliflower just until tender.

2. Reserve about a cup of the stock before draining. Add the cauliflower to a food processor and puree to blend.

3. Add the reserved stock, a tablespoon or so at a time, as needed to achieve a smooth texture. Season as desired.

4. Butter, sour cream or Greek yogurt is optional.

5. Serve hot.
