A Soul Food favorite, fried catfish and fries complete with homemade tartar sauce. You'll be eating and loving this recipe in no time.
For the tartar sauce | ||
Mayonnaise | 2 Cup (32 tbs) | |
Pickles | 1 Tablespoon , chopped finely | |
Capers | 1 Tablespoon , chopped finely | |
Shallots | 1 Tablespoon , chopped finely | |
Garlic | 3 Clove (15 gm) , chopped finely | |
Sweet relish | 1 Tablespoon , chopped finely | |
Parsely | 1 Tablespoon , chopped finely | |
Lemon juice | 1 Teaspoon | |
For the fish | ||
Catfish fillet | 2 Pound (or swai fillet) | |
Eggs | 2 Medium , beaten | |
Cornmeal | 3 Cup (48 tbs) | |
Frying oil | 400 Milliliter (for deep frying) | |
For the fries | ||
Russet potato | 5 Medium , slice (1/4 inch thick) | |
Seasoning | 1 Tablespoon (Grand Diamond Seasoning) |
GETTING READY
1. In small bowl mix all the ingredients for the tartar sauce along with the mayonnaise followed by the lemon juice. Your tartar sauce is ready. Keep it in the refrigerator until ready to serve.
2. In a large pan pour oil for frying and heat so that you achieve 350 degree temperature.
3. Cut the potatoes into 1/2 inch thick slice and blanch in water for 3-4 minutes. Drain and pat dry and then cut then into 1/4 inch.
MAKING
4. In a small bowl beat eggs with ½ Teaspoon of seasoning (or use kosher salt, paprika, thyme, cayenne).
5. In a large bowl season the fish fillets with 1 Tablespoon of seasoning.
6. Once done pour the beaten egg over the fish and coat well.
7. Next crumb the fish fillet with cornmeal.
8. Fry the fish for 3-4 minute on each side in the pan of hot oil.
9. In the same oil or fresh oil you can fry the blanched fries. Once done drain well and season with Grand Diamond Seasoning.
SERVING
10. You serve your Soulful Fried Catfish and Fries along with the tartar sauce and wedges of lemon.
TIPS
You can cut the potatoes to the size of steaks fries and once you blanch them then you can cut them to a shoe-string size.
