Chayotes and Shrimp Casserole

Ingredients

Chayotes 3 Large
Chopped onion 1/2 Cup (8 tbs)
Chopped green onion 1 Cup (16 tbs)
Chopped fresh parsley 3/4 Cup (12 tbs)
Celery stalks 2 , chopped
Chopped green pepper 3/4 Cup (12 tbs)
Garlic 3 Clove (15 gm) , minced
Bay leaf 1 Small
Melted butter/Margarine 2 Tablespoon
Medium shrimp 1 1/2 Pound , peeled and deveined
Egg 1 , beaten
Soft breadcrumbs 1 Cup (16 tbs)
Butter/Margarine 1 Tablespoon

Directions

GETTING READY

1) Preheat the oven to 350 F.

2) Deskin chayotes, and remove the seeds.

MAKING

3) Chop the chayotes to 1- inch cubes and boil them in salt water for about 15-20 minutes till they turn soft.

4)In a skillet -add butter and stir in onion, celery, green pepper, parsley, garlic and bay leaf for two minutes till they turn soft.

5) Add cooked chayotes and cleaned shrimp to it.

6) Cook the mixture for about 3-5 minutes till shrimp turns pink and soft.

7) Take out the bay leaf.

8) Add breadcrumbs and beaten eggs to this mixture and mix well.

9) Add this mixture to greased 2-quart baking dish and flavorize it using butter . Bake this mixture for about 20-35 minutes at 350 F.

SERVING

10) When done with the dish serve it with a vegetable accompaniment.
