For Thanksgiving, I share with you my vegan sweet potato casserole with kale in coconut milk and then topped with chick pea crumbs, plus I am doing a Thanksgiving Giveaway Prize!


Sweet potato 3 Large
Kale 15 Ounce
Onion 1 Large
Coconut milk 1 Can (10 oz)
Bread crumb 1/2 Cup (8 tbs) (Chick Pea Crumbs)
Cumin 1 Tablespoon
Coriander 1 Tablespoon
Paprika 1 Tablespoon
Salt and pepper To Taste
Olive oil 1 Tablespoon
