Jamaican Jerk Paste

Ingredients

Green onion with tops 6 , sliced
Garlic 8 Clove (40 gm)
Corn oil 1/4 Cup (4 tbs)
Red wine vinegar 2 Tablespoon
Lime juice 2 Tablespoon
Firmly packed dark brown sugar 2 Tablespoon
Ground allspice 1 1/2 Teaspoon
Ground cinnamon 1 1/2 Teaspoon
Ground ginger 1 1/4 Teaspoon
Salt 1 Teaspoon
Black pepper 1/2 Teaspoon
Ground red cayenne pepper 1/4 Teaspoon

Directions

1 In a food processor or blender, whirl the green onions, garlic, oil, vinegar, and lime juice for 30 seconds or until smooth.

Add the sugar, allspice, cinnamon, ginger, salt, black pepper, and red pepperand blend for 1 minute or until well combined.

The paste will keep, covered and refrigerated, for up to 2 weeks.

It may also be frozen at 0° F for up to 3 months thaw before using.
