Island Style Jerk Chicken My twist on jerk chicken

Trying out some jerk seasoning from the island of Sint Marteen in the virgin islands. This is my twist on jerk chicken. enjoy.


Red onion 1 Large
Garlic cloves 3
Habanero pepper 1 , seeded
Fresh ginger root 1 Tablespoon
Olive oil 1/4 Cup (4 tbs)
Brown sugar 1/4 Cup (4 tbs)
Red wine vinegar 3 Tablespoon
Orange juice concentrate 3 Tablespoon , thawed
Soy sauce 1 Teaspoon
Ground cinnamon 2 Teaspoon
Ground nutmeg 1/2 Teaspoon
Ground cloves 1/4 Teaspoon
Chopped cilantro 1/2 Cup (8 tbs)
Salt and pepper To Taste
Boneless skinless chicken breast 3 , cut in half



1.  In a food processor, combine onion, garlic, habanero pepper, and ginger. Pulse until ingredients are minced.

2.  Blend in olive oil, brown sugar, vinegar, orange juice concentrate, soy sauce, cinnamon, nutmeg, cloves, cilantro, salt, and pepper.

3.  In a container, combine marinade with chicken. Cover, and refrigerate overnight.

4.  Smoke the chicken as shown in the video.



5.  Serve hot.
