Caribbean Chicken With Mango Salsa -Quick Meal Idea

Ingredients

For chicken:
Boneless, skinless chicken breast 1 Pound , cut as shown in the video (2 half
Salt 1/4 Teaspoon
Pepper 1/4 Teaspoon
Dry mustard powder 1/4 Teaspoon
Ground allspice/Cinnamon /cloves 1/8 Teaspoon
Butter 1 Tablespoon
Oil 1 Teaspoon
For salsa:
Mangoes 2 , cut into " cubes for about 2 cups
Green onions 2 , sliced thinly
Jalapeno 1 , diced, seeded for less heat
Diced radishes/Cucumber 1/2 Cup (8 tbs)
Chopped cilantro/Basil /mint 1/4 Cup (4 tbs)
Lime juice 1 Tablespoon

Directions

MAKING:

In a small bowl, combine salt, pepper, mustard powder, allspice and mix well.

Sprinkle over chicken meat and set aside.

Heat a skillet and melt butter in it. Add oil and place the chicken pieces with thickest partsin the center.

Flip the chicken after 2 minutes.

Once cooked remove from the pan.

For mango salsa, combine mango, green onions, jalapeno, radishes, cilantro, lime juice and toss well.

SERVING:

Serve chicken with mango salsa and enjoy!
