Jerk Paste

A special Jerk paste made of Scotch Bonnet peppers, thyme, pimento berries, black peppercorns and many other spices.

Ingredients

Lime juice 1/4 Cup (4 tbs)
Dark soy sauce 1/4 Cup (4 tbs)
Vinegar 1/4 Cup (4 tbs)
Orange rind 2 Tablespoon
Roughly chopped ginger 2 Tablespoon
Garlic 8 Clove (40 gm) , roughly chopped
Onion 1/2 , roughly chopped
Spring onion bulbs 3
Fresh thyme 2 Tablespoon
Scotch bonnet chili 4
Pimento berries 1 Teaspoon
Black peppercorns 1 Teaspoon
Coriander powder 1 Teaspoon
Cumin powder 1 Teaspoon
Cinnamon powder 1 Teaspoon
Clove powder 1/4 Teaspoon
Salt 1 Teaspoon
Brown sugar 1 Teaspoon

Directions

MAKING

1. Take lime juice, dark soy sauce, vinegar, orange rind, chopped ginger, chopped garlic, red onion, spring onion bulbd, thyme leaves, scotch bonnet peppers in a blender.

2. Add pimento beriies, black peppercorns, coriander, cinnamon, cumin, clove powder, brown sugar and salt.

3. Biltz everyhting to make a thick paste.

4. Store the is marinade in an air tight container in the refrigerator.

SERVING

5. Spice up your burger, barbecue chicken or anything you like.
