A special Jerk paste made of Scotch Bonnet peppers, thyme, pimento berries, black peppercorns and many other spices.

Orange rind | 2 Tablespoon | |
Roughly chopped ginger | 2 Tablespoon | |
Garlic | 8 Clove (40 gm) , roughly chopped | |
Onion | 1/2 , roughly chopped | |
Spring onion bulbs | 3 | |
Fresh thyme | 2 Tablespoon | |
Scotch bonnet chili | 4 | |
Pimento berries | 1 Teaspoon | |
Black peppercorns | 1 Teaspoon | |
Coriander powder | 1 Teaspoon | |
Cumin powder | 1 Teaspoon | |
Cinnamon powder | 1 Teaspoon | |

MAKING
1. Take lime juice, dark soy sauce, vinegar, orange rind, chopped ginger, chopped garlic, red onion, spring onion bulbd, thyme leaves, scotch bonnet peppers in a blender.
2. Add pimento beriies, black peppercorns, coriander, cinnamon, cumin, clove powder, brown sugar and salt.
3. Biltz everyhting to make a thick paste.
4. Store the is marinade in an air tight container in the refrigerator.
