This weekend I fire up the Mojo Griddle and make some outrageous Jamaican Jerk burgers.

Jamaican jerk paste
Scotch bonnet 1 , seeded
Green onion 2
Thyme 2 Teaspoon
Garlic cloves 2
All spice 2 Teaspoon
Cinnamon 1/2 Teaspoon
Nutmeg 1/2 Teaspoon
Pepper 1/2 Teaspoon
Salt 1/2 Teaspoon
Brown sugar 1 Tablespoon
Orange zest 1 Tablespoon
White vinegar 2 Tablespoon
Other ingredients
Ground chuck 1 Pound
Chopped mango 1 Cup (16 tbs)
Lime juice 1 Tablespoon
Mayonnaise 1 Cup (16 tbs)
Pineapple slices 2
Buns 2 , halved
For seasoning griddle
Kosher salt 1 Teaspoon
Oil 1 Teaspoon

1. Season mojo griddle with oil and salt.

2. In a blender, blend together all ingredients of the jerk paste.

3. Mix together ground chuck and the jerk paste. Form into patties and refrigerate for about an hour.

4. Blend together mangoes and lime juice to a smooth paste. Add this paste in desired amount to the mayonnaise and mix.

5. On heated mojo griddle, place the patties and cook from both sides. Place pineapple slices too and cook from both sides.

6. Toast the buns. Place a lettuce, patty and pineapple slice, on the top half, spoon some mango mayonnaise. Cap the bottom half with the top half. Repeat for the other bun.

7. Serve with your choice of beverage.
