One of the Best burgers I've ever had! Simple, yet all the flavors blend together perfectly!!!

Beef bones | 4 | |
Unsalted butter | 1/2 Cup (8 tbs) | |
Crumbled blue cheese | 1/2 Cup (8 tbs) | |
Red wine | 1 1/2 Cup (24 tbs) , reduced to 1/8 cup | |
For burger | ||
Ground beef | 1 Pound (Beef short rib used as needed) | |
Clarified butter | 2 Tablespoon (For greasing) | |
Kosher salt | To Taste | |
Fried onion rings | 1 Cup (16 tbs) (onion soaked in buttermilk, coated with seasoned flour and fried) | |

GETTING READY
1.Preheat oven to 425 degree F.
MAKING
For Compound Butter:
2.Roast beef bone in oven for about 40-45 minutes. Take the marrow out of the bone as shown in the video.
3.To the bone marrow add butter, blue cheese, and red wine (reduced to 1/8 cup). Mix until well combined.
4.On plastic wrap, transfer the butter mixture, roll into a log and pop in refrigerator until nice and hard.
For Burger:
5.Roll the meat into patties (1/3 pound of meat each patty) and place in fridge.
6.Preheat grill and grease it with butter, sprinkle kosher salt and place patties on it.
7.Place a parchment paper on top of patty and smash it with the help of heavy spatula. Season with kosher salt and cook until done. In the last minute of cooking, put a slice of compound butter on top and cook until melted. Repeat to make more.
8.Toast buttered bun on grill.
SERVING
9.On bun, lay a lettuce, followed by a patty, fried onion rings. Cover and serve immediately.
