Le Cellier Beer and Cheddar Soup from Disney's Epcot

This is my version of Le Cellier's Beer and Cheddar cheese soup. This soup tastes similar to the one served at Disney's Epcot.


Smoked bacon 1/2 Pound , sliced into small pieces (apple wood smoked)
Butter 4 Tablespoon
Chopped red onion 1 Cup (16 tbs)
Thinly sliced celery 1 Cup (16 tbs)
Chopped carrot 1 Cup (16 tbs)
Flour 1 Cup (16 tbs)
Low sodium chicken stock 3 Cup (48 tbs)
Heavy cream 1 Pint , divided
Aged white cheddar 1 Pound , grated
Dry mustard powder 1 Teaspoon
Tobasco sauce 1 Tablespoon
Worcestershire sauce 1 Tablespoon
White pepper 1 Teaspoon
Dark beer 1 Bottle (1 l)



1. In a large stew pot, over low flame sweat sliced bacon. Do not try to brown the bacon; you want to release the fat from it.

2. When a couple of tablespoons of fat have been released and the bacon begins to look cooked add butter and allow it to melt.

3. Turn heat up to low-medium and add chopped onion, carrot, and celery. Cook until veggies turn translucent.

4.Add flour, cook for a couple of minutes and then pour stock, a cup at a time, stirring constantly until the mixture looks thick and gravy like.

5. Add cream, stir until well incorporated. Add grated cheese by thirds into soup, stirring until all of the cheese is fully melted.

6. Stir in tobasco sauce, dry mustard, pepper, Worcestershire sauce, and stir until fully blended.

7. Slowly pour in beer stirring until well blended.


8. Serve soup immediately.


Use a good quality dark beer, brands/styles that I like: Shiner Bock, Saint Arnold's Amber, Abita Beer Amber, any Oktoberfest style of beer.

If you must reheat the soup, do so very gently over low on the stove, you may need to thin with milk.
