Egg whites 12 ((at room temperature))
Cream of tartar 1 1/2 Teaspoon
Salt 1/4 Teaspoon

Cake flour 1 Cup (16 tbs)
Cocoa powder 1/3 Cup (5.33 tbs)
Vanilla extract 1 1/2 Teaspoon

1. Preheat oven to 375 degree F.

2. In a large bowl, beat egg whites with an electric mixer until foamy.

3. Add cream of tartar and salt. Continue to beat until soft peaks form.

4. Add sugar, a little at a time and beat after each addition until stiff peaks form.

5. In a small bowl, combine cake flour and cocoa powder.

6. Fold flour mixture into the egg white mixture. Pour vanilla and fold it in.

7. Into ungreased 10-inch tube pan, pour the batter and spread evenly. Remove the air bubbles if any.

8. Pop in oven and bake for 25-35 minutes or until a cake tester when inserted comes out clean. Cover with foil, if needed to prevent from browning.

9. Invert pan and let cool for 40 minutes. Use a knife to loosen the cake from sides of pan and from tube. Transfer to a cake plate and let cool completely.

10. Cut into slices and serve plain or frosted.
