Homemade 7up Pound Cake- From Scratch

So here's my easy 7up Pound Cake recipe. It's inexpensive and really easy to share at parties or family outings. It would be a great addition to your Labor Day cookout this weekend. Enjoy!

Ingredients

Unsalted butter sticks 3 (room temperature)
Granulated sugar 3 Cup (48 tbs)
Whole eggs 5 (room temperature)
Lemon extract 1 Tablespoon
Pure vanilla extract 1 Teaspoon
7up 8 Ounce (1 cup)
Cake flour 3 Cup (48 tbs) (Swan’s Down Cake Flour)
For brushing and coating
Melted butter 1 Tablespoon (For greasing)
Cake flour 1/4 Cup (4 tbs) (For dusting)

Directions

GETTING READY

1. Preheat the oven to 350 degrees F.

2. Prepare a butter greased and four dusted bundt cake pan. Shake out excess flour and set aside.

MAKING

3. In a mixing bowl combine butter and sugar, using a hand mixer cream everything for 5 minutes or until light and fluffy.

4. Add eggs to the mixture one at a time and blend everything until well incorporated.

5. Add lemon and vanilla extract, mix everything until well combined.

6. Add cake flour and 7up to the batter alternately, begin and end with flour. Scrape the sides of the bowl whenever needed.

7. Pour the cake batter in the pan and spread it evenly. Bake in the preheated oven for 1 hour and 10 minutes or until the inserted wooden skewer comes out clean.

8. Once done remove the cake from the oven and cool in the pan for 10-15 minutes and then remove the cake and allow it to cool on cooling rack for 1 hour.

SERVING

9. Serve the Pound cake along with a cup of hot coffee.
