Banana Walnut Apricot Cake

A banana walnut cake itself is a delicacy. After the addition of apricot, it became just a master piece. The subtle flavor of banana blended with the flavor of cinnamon and nutmeg, was an additional touch to this dessert.


Dry ingredients
All purpose flour 3/4 Cup (12 tbs)
Whole wheat flour 3/4 Cup (12 tbs)
Powdered sugar 1 Cup (16 tbs)
Baking powder 2 Teaspoon
Soda bicarbonate 1/4 Teaspoon
Cinnamon powder 1/2 Teaspoon
Nutmeg powder 1/2 Teaspoon
Wet ingredients
Ripe banana 2
Vegetable oil 1/2 Cup (8 tbs)
Eggs 3 Large
Vanilla essence 1 Teaspoon
Dry fruit mix
Chopped walnut 2 Teaspoon
Chopped apricots 2 Teaspoon



1. Preheat oven to 180 C or 350 F.


2. In a large bowl, sift in all the dry ingredients except sugar, one by one. Mix well and keep aside.

3. In another large bowl, mash the bananas to a fine paste with the use of a potato masher or fork. Pour in oil and mix well. Add sugar to the mixture and thoroughly beat until the mixture turns light and creamy.

4. Add the vanilla essence to this mixture and mix well.

5. In a medium bowl, whisk the eggs till it becomes foamy.

6. Add the dry mixture and the beaten egg to the banana mix and mix well so that there is no lump. The batter should be smooth and heavy after everything is nicely mixed.

7. Using a spatula fold in the dry fruits in the batter.

8. In the greased and floured baking pan, slowly pour the batter. Let the batter set in the baking tin before placing inside the oven. Let it bake at 180 C or 350 F, for 30-35 minutes or until a toothpick comes out clean once inserted in the middle.

9. Allow the cake to cool down slightly before removing to the cake serving plate.


10. Drizzle honey or chocolate sauce on top of the slice before you serve.
