Stemilt Cherry & Chocolate Layer Cake

When it is hot outside, baking is often the last thing on your mind, and this simple chilled layer cake has all the delights of a cake without the hours of baking. Full of juicy and sweet Stemilt cherries, generous helpings of freshly whipped chocolate cream and buttery cake, this cake is a summer favorite. And because Stemilt cherries are available all the way up to September, you can enjoy this cake all summer long.


Cherries 5 Cup (80 tbs)
Heavy whipping cream 1 Pint
Confectioners sugar 1 Cup (16 tbs)
Cocoa powder 2 Tablespoon
Vanilla extract 1 Tablespoon
Pound cake 2 (2 standard loaves)



1. Add the cream, cocoa powder, vanilla and sugar to a large mixing bowl and whisk until stiff.

2. Place slices of the pound cake at the bottom of the bowl and layer with whipped cream and cherries until you reach the top of the bowl.


3. Garnish with fresh cherries and chocolate shavings on top before serving.
