This simple apple cake is easy to manage and great to the palate. If you have 1-2 apples left in your refrigerator, then this is the delicious-most way to use them up.

All purpose flour 1 1/4 Cup (20 tbs)
Baking powder 1 Teaspoon
Powdered sugar 1/2 Cup (8 tbs)
Apple 1 Medium , peeled and thinly sliced
Eggs 2 Large
Vegetable oil 1/2 Cup (8 tbs)
Milk 1/4 Cup (4 tbs)
Vanilla essence 1 Teaspoon
For cardamom sugar
Cardamom powder 1/2 Teaspoon
Powdered sugar 1 Tablespoon

1. Preheat your oven to 150C.

2. Grease the baking tin with few drops of oil and a pinch of flour. Keep aside.

3. In a large bowl, sieve in flour and baking powder. Keep aside.

4. In another large bowl, crack 2 eggs and start beating thoroughly. Gradually add powdered sugar to the eggs and continue beating, until the sugar gets dissolved in the egg and the mixture becomes light and frothy.

5. Pour in oil and continue beating.

6. Slowly add the dry mixture to the wet mixture and using a spatula, fold in the dry mixture into the wet mixture.

7. Pour in the milk and mix well. The batter should be little thin in consistency. Add the vanilla essence and mix well.

8. Use the baking tin to pour 1/3 part of the batter, to make the base layer. Lightly place 1/2 of the apple slices on top of the batter, covering the surface. Sprinkle the cardamom sugar on top of the apple layer. Slowly pour in another 1/3 part of the batter, on top of the apple layer. Place remaining half of the apple slices on top of the 2nd layer of batter. Sprinkle cardamom sugar on top of the apple layer and end up with the final part of the batter, pouring on top of the 2nd apple layer.

9. Place the baking container inside the oven and bake for 45 minutes or until a toothpick comes out clean from the central part of the cake.

10. Serve as an afternoon snack with tea or coffee or ice-cream.
