Root Beer Cake

The sweet, refreshing flavor of root beer makes this old-fashioned cake a year 'round favorite!

Ingredients

For cake
Sugar 1 Cup (16 tbs)
Butter 1/2 Cup (8 tbs) , softened
Vanilla extract 1/2 Teaspoon
Eggs 2 , beaten
All purpose flour
Baking powder 1 Tablespoon
Salt 1 Teaspoon
Root beer 2/3 Cup (10.67 tbs) , chilled
For frosting
Butter 1/4 Cup (4 tbs) , softened
Salt 1/8 Teaspoon
Powdered sugar 2 Cup (32 tbs)
Milk 4 Tablespoon
Root beer 1/3 Cup (5.33 tbs)

Directions

GETTING READY

1. Preheat the oven to 375 F.

MAKING

2. In a large bowl, put together sugar, 1/2 cup butter, vanilla, eggs, flour, baking powder, one teaspoon salt and 2/3 cup root beer.

3. Using an electric mixer, blend the flour mixture on low speed, and then beat the mixture for 3 minutes on medium speed.

4. In a greased and floured 8”X 8” baking pan, pour the batter, flatten the surface and bake for 30 to 35 minutes, or until the toothpick inserted in center comes out clean.

5. Remove from the oven and allow to cool.

FINALIZING

6. Meanwhile, in a bowl, put together remaining butter, remaining salt, powdered sugar and 2 tablespoons of milk.

6. Using an electric mixer, blend the powdered sugar mixture, until smooth.

7. Stream in the remaining root beer and beat, add in remaining 2 tablespoon of milk if needed to get the right consistency.

8. Spread the frosting on cooled cake.

SERVING

9. Cut the cake in squares and serve as desired.

TIPS

Top with whipped cream and berries if desired.

You can also use vanilla frosting if you wish.

Add in more powdered sugar if you need stiffer frosting.
