Lynn's Vanilla Wafer Cake

Lynn demonstrates how to make a simple, delicious Vanilla Wafer Cake. This is a great dessert or afternoon treat.


Vanilla wafers 11 Ounce , crushed
Eggs 6
Granulated sugar 1 3/4 Cup (28 tbs)
Evaporated milk 1/2 Cup (8 tbs)
Lemon extract 1 Teaspoon
Coconut 1 1/2 Cup (24 tbs)
Pecans/Nuts 1 Cup (16 tbs) , chopped
Butter 1 Cup (16 tbs)
Cooking spray 4 Dash (Cooking spray with flour)



1. Preheat the oven at 350° F. Grease a Bundt pan with cooking spray. Set aside.


2. In a mixing bowl add in the butter and sugar; cream together for few minutes with stand mixer.

3. Add in the eggs and continue mixing.

4. Add in the milk, vanilla wafers and coconut along with the lemon extract. Mix until well blended.

5. Add in the pecans to the batter and fold well.

6. Pour the batter into the prepared Bundt pan.

7. Bake in a preheated 350° oven for 70 minutes until center is done. Test with a toothpick that comes out clean or a cake tester.

8. Cool for 15 to 20 minutes and remove from the pan.


9. Slice the cake and serve with caramel sauce.
