Welsh Cakes

A must try dish!

Ingredients

Flour 2 Cup (32 tbs)
Butter 4 Ounce
Sugar 3/4 Cup (12 tbs)
Currant 1/2 Cup (8 tbs)
Eggs 2 (1 or 2)
Milk 1/4 Cup (4 tbs) (as required)
All spice 1/4 Teaspoon
Baking powder 1/2 Teaspoon

Directions

MAKING

1. In a mixing bowl, add butter and flour. Rub and mix them together with hands, until they form small little granules.

2. Throw sugar, baking powder, all spice, and currants in it. Mix.

3. Add eggs, and just enough milk to stir it into soft dough.

4. On working board, sprinkle flour, place dough, and roll it into 1/8-inch thickness round.

5. With cookie cutter, give it shape.

6. Place a frying pan on medium-high heat and grease it generously with butter. Place cakes in pan and cook until golden brown. Then, set them on wire rack to cool.

SERVING

7. Serve Welsh cake sprinkled with fruit sugar on top. Accompany with fresh fruit jam or preserves and or butter or clotted cream.
