Prune Spice Cake

Ingredients

Boiling water 1 Cup (16 tbs)
Prunes 1 Cup (16 tbs) , pitted and chopped (Uncooked)
Sifted flour 2 Cup (32 tbs)
Sugar 1 1/2 Cup (24 tbs)
Salt 1 Teaspoon
Baking soda 1 1/4 Teaspoon
Cinnamon 1 Teaspoon
Nutmeg 1 Teaspoon
Cloves 1 Teaspoon
Oil 1/2 Cup (8 tbs)
Eggs 3 Small (Unbeaten)
Nuts 1 Cup (16 tbs) , chopped
For streusel topping
Flour 3/4 Cup (12 tbs)
Water 1 Tablespoon
Butter 1/4 Cup (4 tbs) , softened
Cinnamon powder 1 1/2 Teaspoon

Directions

GETTING READY

1. Preheat oven to moderate, 350°F, 180°c, gas mark 4.

2. Grease a 13x9 1/2x2 inches pan or a muffin tray.

3. For the streusel topping, mix all the ingredients and rub until crumbly.

MAKING

4. Put the prunes in a bowl and pour boiling water over it, enough to cover it; leave it for 2 hours and drain.

5. Mix all the dry ingredients and sift them into a large mixing bowl.

6. Add prunes, oil, eggs and nuts and mix thoroughly for about 1 minute.

7. Beat 2 minutes at medium speed on mixer or 300 strokes by hand.

8. Pour into the greased pan or in a muffin tray, sprinkle with streusel topping and bake in the preheated oven for 45 to 50 minutes (20 to 25 minutes if using muffin tray).

SERVING

9. Serve warm with caramel sauce or vanilla ice cream. You can also top it with your favourite icing instead of streusel topping.
