Chocolate Wedding Cake

Ingredients

Butter 1 Cup (16 tbs) , softened
Granulated sugar 1 1/2 Cup (24 tbs)

Directions

GETTING READY

1) Grease and flour an 8 inch round cake tin

2) Line the base with parchment paper

3) Preheat the oven to 350 F

MAKING

4) Into a bowl, using an electric mixer cream the butter till pale yellow

5) Add the sugar and beat well

6) Add eggs one at a time and then add in the vanilla

7) Sift the flour, cocoa, baking powder, baking soda and salt

8) Add the butter and then the buttermilk in alternative additions and mix well

9) Pour the batter into a prepared pan

10) Bake at 350 F for 80 minutes till the cake is firm to touch

11) Allow to cool in the cake

12) Allow to cool in the cake tin for 5minutes before turning onto a wire rack to cool

13) Peel off the parchment paper

14) Grease and flour a 12 inch round cake tin

15) Line with base with parchment paper

16) Using the same ingredients, double the quantity

17) Make the batter and bake the cake for 95 minutes till a skewer inserted comes out clean and the cake is firm to touch

18) Onto a platter, place a parchment paper and then place the larger cake which is the bottom tier

19) Onto a foiled cardboard, place the smaller cake which is the top tier

20) Using the icing spatula, spread the chocolate frosting all along the sides and top of both the cakes

21) Invert the top tier cake over the bottom cake and trace an outline of the top tier cake onto the bottom tier

22) Cut 6 straws in the height of the bottom cake and insert at 2.5cm distance from inside the traced circle and also in the center of the circle

23) Coat the sides of the cakes with chopped hazelnuts

24) Using two spatulas, carefully position the top tier over the bottom tier

25) Using an icing bag fitted with a star nozzle, pipe a shell like pattern all along the edge of the top tier

26) Refrigerate upto 2 days

SERVING

27) Arrange the leaves and roses and serve
