Microwave Pineapple Upside Down Cake

Butter 1/4 Cup (4 tbs)
Brown sugar 1/3 Cup (5.33 tbs) , firmly packed
Canned pineapple slices 8 Ounce , drained and liquid reserved (1 Can)
Maraschino cherries 4 , cut in half
All purpose flour 1 1/4 Cup (20 tbs)
Sugar 3/4 Cup (12 tbs)
Baking powder 2 Teaspoon
Salt 1/2 Teaspoon
Shortening 1/3 Cup (5.33 tbs)
Egg 1
Milk 1/8 Cup (2 tbs) , mixed with the canned pineapple liquid to make 1/4 cup total
Vanilla 1 Teaspoon


In 8-inch round microwave-safe dish, place butter.

Microwave at high (10) 3/4 to 1 minute to melt.

Sprinkle sugar over butter.

Drain pineapple, reserving liquid.

Arrange pineapple slices in dish.

Decorate with cherries.

In small mixer bowl, place flour, sugar, baking powder, salt, shortening, egg, pineapple-milk mixture and vanilla.

Beat 3 minutes on lowest mixer speed.

Carefully spread batter over fruit in dish.

Microwave at high (10) 8 to 12 minutes.

When done, toothpick inserted in center of cake comes out clean.

Invert cake onto plate; let dish stand over cake 5 minutes.
