My Mom's Stone Fruit Cake Recipe With Coconut Base

This is my adaptation of my Mom's Stone Fruit Cake. I've made it gluten-free with coconut base and it's a great dessert made with awesome seasonal fruits.


For pastry
Butter 200 Gram
Coconut flour 1 Cup (16 tbs)
Rice flour 1 Cup (16 tbs)
Egg yolks 5
Water 1/2 Cup (8 tbs)
Sugar 1 Teaspoon
Lemon zest 1 Teaspoon
Vanilla extract 1 Teaspoon
Baking powder 1 Teaspoon
Salt 1 Pinch
For filling
Stone fruits 4 Pound
Vanilla extract 1 Teaspoon
Cornstarch 2 Tablespoon
For meringue
Egg white 5
Sugar 1 1/4 Cup (20 tbs)
