A dark, damp, dense chocolate loaf cake- no embellishments, no frosting, no fancy frills. Just a majestic chocolate dessert.
|Coconut oil/Softened butter||200 Gram (Just under 1 cup)|
|Sugar||1 2/3 Cup (26.67 tbs) (I use raw, but brown or granulated sugar should work fine)|
|Dark chocolate||4 Ounce , melted in the microwave/over a double boiler (110 g)|
|Cocoa powder||1 Tablespoon|
|Baking soda||1 Teaspoon|
|Hot coffee||1 Cup (16 tbs) (1 cup boiling water + 2 tsp instant espresso powder|
|All purpose flour||1 1/3 Cup (21.33 tbs)|
Preheat oven to 350°F/180°C.
Line loaf tin/ grease with butter or dust with flour/line with parchment paper.
In a bowl, cream together oil or butter with sugar until well combined.
Add eggs and mix well.
Add baking soda, salt, cocoa and mix well.
Slowly blend in melted chocolate and mix well.
Add hot coffee, flour and mix well in alternate batches.
Pour the batter into prepared loaf pan and pop into oven.
Bake for 45-50 minutes.
