Mini Plum Cake - Christmas Special -Eggless Baking Without Oven

Baking gets easy in a cooker when oven is not handy. Tring Tring! Xmas is all around the corner and here is a recipe of Plum cakes loaded with caramel stewed fruits nuts. A must try in the Holiday season. Plus is that, these are made without much soaking, and yes no alcohol used. Gets ready quick which makes these a perfect gifting idea!

Ingredients

For soaking fruits:
Sugar 1/2 Cup (8 tbs)
Hot water 1 1/2 Cup (24 tbs)
Dry fruit 1 1/2 Cup (24 tbs) (((candied fruits, Roughly about 270 gms)))
For plum cakes:
Butter 85 Gram
Condensed milk 160 Gram
Plain flour 130 Gram (((Maida)))
Baking soda 1/4 Teaspoon
Baking powder 1/2 Teaspoon
Almond powder 20 Gram (((plus a little for topping the cakes)))

Directions

GETTING READY:

Preheat oven to 180°C/ cooker in medium flame with 1-2 cups of salt.

Grease baking pan with butter and keep it ready.

 

MAKING:                        

In a pan, heat sugar over medium flame and bring caramel to bubble.

Pour hot water and stir well.

After boiling for 1 minute add candied fruits and dry fruits.

Cook for 4-5 minutes or until thickened. Allow to cool.

In a mixing bowl, combine butter, condensed milk and whip well.

Once mixture is fluffy add caramel syrup, flour, baking soda, baking powder, almond powder and mix well.

Add soaked fruits and mix well.

Spoon batter into pan and sprinkle almond powder over it.

Pop into oven and bake for 20 minutes or pressure cook for 30 minutes. Cover with aluminium foil and allow to stay for a while.
