Apple and Ginger Cake Recipe

So moist and delicious! This will soon become a family favorite.


Butter 3/4 Cup (12 tbs) (at room temperature)
Brown sugar 1 Cup (16 tbs)
Eggs 3
All purpose flour 1 Cup (16 tbs)
Baking powder 1 Tablespoon
Ground cinnamon 1 Teaspoon
Ground ginger 1 1/2 Teaspoon
Lemon zest 1 Teaspoon
Peeled apples 3
Demerara sugar 1 Tablespoon


Getting Ready

Preheat oven to 350ºF (180ºC). 


Grease and line a 8x8” baking pan.

Mix together flour, baking powder and spices

Cream together butter and brown sugar until light and fluffy. 

Add eggs, one at a time, beating well after each addition. 

Fold dry into butter mixture, add lemon zest, and 1 chopped apple and mix into batter.

Fill prepared pan, smoothing top with a spatula. 

Bake for 10 mins. Remove from oven, and arrange sliced apples over batter. 

Sprinkle with demerara sugar, and bake for another 20-25 mins, or until a skewer inserted comes out clean. 

Cool in pan.
