How To Make Caramel Ginger Molasses Cookies

Crisp on the outside, soft on the inside. That's how we all like our cookies. And this one fits the cookie criteria perfectly. An incredibly soft cookie bursting with flavors of ginger, molasses, cinnamon and nutmeg- with a drizzling of salted caramel sauce- puts you right in Cookie Heaven.

Ingredients

All purpose flour 3 Cup (48 tbs)
Baking soda 1 Teaspoon
Ground ginger 2 Teaspoon
Ground cinnamon 1 1/4 Teaspoon
Ground nutmeg 1/4 Teaspoon
Salt 1/4 Teaspoon
Unsalted butter 3/4 Cup (12 tbs) (at room temperature)
Brown sugar 3/4 Cup (12 tbs) (I used ½ cup brown sugar and ¼ cup granulated sugar)
Dark molasses 1/3 Cup (5.33 tbs)
Egg 1
Sugar 1/3 Cup (5.33 tbs) (for rolling)
Vanilla extract 2 Teaspoon
Caramel sauce 3/4 Cup (12 tbs) (I used the Marks&Spencer brand

Directions

GETTING READY:

Preheat oven to 350°F/ 180°C.

Line baking trays with parchment paper.

 

MAKING:

In a bowl, combine flour, baking soda, ginger, cinnamon, nutmeg, salt and mix well.

In another bowl, cream together butter and sugar until light and fluffy.

Add egg, vanilla, molasses and mix well.

Add flour mixture in batches into egg mixture until dough turns thick.

Cover with a cling film and refrigerate for an hour.

Roll balls of dough and coat with sugar as shown in the video. Place on tray and pop into oven.

Bake for 8 minutes and once done, gently press down.

Pop into oven again and bake for 1 minute.

Allow to cool completely on rack and drizzle caramel sauce over it.
