A twist on a classic spice cake with a surprise ingredient that makes it wonderfully moist. This is a very flavorful cake that is perfect for Christmas. Drenched in caramel sauce, it is hard to resist this gooey goodness. The cake tastes fabulous warm- a definite crowd pleaser. It's The Pioneer Woman's original recipe. For caramel sauce: | ||
Sugar | 1 Cup (16 tbs) | |
Buttermilk | 1/2 Cup (8 tbs) | |
Baking soda | 1/2 Teaspoon | |
Light corn syrup | 1/2 Tablespoon | |
Butter | 4 Tablespoon | |
Vanilla extract | 1/2 Teaspoon |
GETTING READY:
Preheat oven to 300°F/ 150°C.
Grease baking pan with butter and keep it ready.
MAKING:
In a pan, combine dried prunes with water and bring to boil for 7-10 minutes. Once it boils, drain the prunes and mash well. Allow to cool completely.
In a large bowl, combine all purpose flour, cinnamon, nutmeg, allspice, baking soda and mix well.
In another bowl, whisk together sugar, eggs, vegetable oil and vanilla extract until well incorporated.
Combine the egg mixture with flour mixture, buttermilk and mashed prunes. Mix well.
Pour the mixture into baking pan and pop into oven.
Bake for 35-40 minutes at 300°F/ 150°C.
For caramel sauce, combine sugar, buttermilk, baking soda, light corn syrup, butter, vanilla extract and whisk well.
Cook until mixture boils and then cook for 5-7 minutes until the colour changes.
Pour over baked cake and spread well. Allow to cool and cut into pieces
