Strawberry Ombre Cake With White Chocolate Cream Cheese Buttercream Frosting

Father's Day and the 4th of July is fast approaching. Why not give this Strawberry Ombre Cake with White Chocolate Cream Cheese Buttercream frosting a try? This cake is moist and the frosting offers a subtle amount decadence.

Ingredients

For cake batter:
Fresh strawberries 3/4 Cup (12 tbs) (plus 2
Unsalted butter stick 2 1/2 (plus 1 to 2 Tablespoons for preparing the cake pans, room temperature)
Granulated sugar 2 1/2 Cup (40 tbs)
Egg whites 8 (room temperature)
Strawberry extract 1 Tablespoon
Baking powder 5 1/2 Teaspoon
Kosher salt 1 1/4 Teaspoon (1 Teaspoon Table Salt)
All purpose flour 1 Cup (16 tbs) , sifted
Cake flour 2 1/4 Cup (36 tbs)
Buttermilk 1 Cup (16 tbs) (at room temperature)
Red food coloring 1
For white chocolate cream cheese buttercream frosting:
Chocolate wafers/Lindt white chocolate bars 12 Ounce (white, Guittard recommended, white chocolate chips are not recommended)
Cream cheese 12 Ounce (at room temperature)
Unsalted butter 8 Ounce (at room temperature)
Pure vanilla extract 1 1/2 Teaspoon
Powdered sugar 3 1/2 Cup (56 tbs)

Directions

GETTING READY:

Preheat oven to 350°F.

 

MAKING:

In a large bowl, combine sugar, butter and blend until light and fluffy.

Add egg whites (slowly), strawberry extract and process until well blended.

In another bowl, combine all purpose flour, cake flour, baking powder, salt and mix well.

Add buttermilk, dry flour mixture, strawberries and mix well.

To every 2 cups of prepared batter, add red food coloring and mix well.

The number of drops of food coloring per layer should be as follows: Layer 1=2 drops, Layer 2= 6 drops, Layer 3=20 drops, Layer 4=1 teaspoon.

Transfer the batter to cake pan and pop into oven. Bake for 25 minutes at 350°F.

Melt white chocolate using double boiling method.

In a bowl, combine butter, cream cheese, vanilla extract, melted white chocolate, powdered sugar and mix well.

Layer cake with frosting as shown in the video and pop into refrigerator.

Chill for 10-15 minutes and apply frosting again.

Top with strawberries.
