How To Make A Mocha Coffee Cake a.k.a. Coffee, Chocolate And Vanilla Marble Cake

Get your dose of coffee with this mocha coffee coffee cake- a chocolate, vanilla and coffee swirled cake topped off with a coffee glaze that you eat with coffee. Oh yeah.


For the cake:
Unsalted butter 3/4 Cup (12 tbs)
Granulated sugar 1 Cup (16 tbs)
Eggs 2 Large
Vanilla extract 2 Teaspoon
Baking powder 1 Teaspoon
Baking soda 1/2 Teaspoon
Salt 1/2 Teaspoon
All purpose flour
Natural yogurt 1 Cup (16 tbs) (Greek)
Cocoa powder 2 Tablespoon
Instant espresso powder/Instant coffee granules 2 Tablespoon
For the glaze:
Confectioners' sugar 3/4 Cup (12 tbs)
Instant espresso powder/Instant coffee granules 2 Teaspoon
Hot water 2 Tablespoon



Preheat oven to 350°F/180°C.

Grease bundt pan with butter and coat with flour.



In a bowl, cream together butter and sugar until light and fluffy. Add eggs, vanilla extract and whisk well.

Add baking powder, baking soda or salt and mix well.

Add flour and yogurt alternatively in small batches.

In a bowl, combine cocoa powder with 2 tablespoons of water until smooth paste is formed.

In another bowl, dissolve espresso powder with 1 1/2 tablespoons of hot water.

Divide prepared batter into 3 portions. Add one portion to cocoa mixture and another one to espresso mixture. Let the third portion remain in the same bowl.

Spoon dollops of batter into prepared pan, alternating each flavour as shown in the video.

Pop into oven and bake for 55-60 minutes until top turns golden brown. Allow to cool completely for an hour.

For glaze, combine espresso and water in a bowl. Add sugar and mix well. Adjust consistency as desired.

Drizzle on cooled cake and allow to rest until glaze hardens.
