Christmas Fruit Cake Recipe - Eggless, Alcohol Free

Its Christmas Fruit Cake.. Its known as Black Cake, Plum Cake, Fruitcake and so on.. Many names, simple variations! This is not a traditional recipe. I have used simple dried fruits to make this, replaced alcohol with orange juice! And as usual, this is a eggless recipe! It can be made without an oven too.

Ingredients

For fruit soak
Fresh orange juice 3/4 Cup (12 tbs) ((1/2
Tutti frutti/Candied papaya 6 Tablespoon
Cashewnuts 2 Tablespoon ((1
Dried figs 2 Tablespoon ((1
Walnuts 2 Tablespoon ((1
Dried dates 2 Tablespoon ((1
Almonds 2 Tablespoon ((1
Dates 2 Tablespoon ((1
Candied ginger 2 Tablespoon ((1
Raisins 2 Tablespoon ((1
Garam masala/Nutmeg + cinnamon 1 tsp 1 Teaspoon
Salt 1/2 Teaspoon
For the cake
All purpose flour 1 Cup (16 tbs)
Condensed milk 1/2 Cup (8 tbs)
Butter 1/4 Cup (4 tbs)
Sugar 1/4 Cup (4 tbs)
Orange juice/Milk/water 4 Tablespoon
Vanilla extract 1/2 Teaspoon
Orange zest 1/2 Teaspoon
Baking powder 1/2 Teaspoon
Baking soda 1/4 Teaspoon

Directions

MAKING

1.     For Fruit Soak - Mix all the Ingredients in a Glass Bowl/Container and Cover with Cling wrap and refrigerate overnight or upto 36hrs.

2.     For the Cake, preheat your oven to at 180 C.

3.     Mix Baking Powder, Soda, Flour and Sieve twice.

4.     In a mixing bowl, beat butter and sugar until light and fluffy. Then add in condensed milk. Beat for 3-5 mins or until pale and light.

5.     Add in half of the flour, orange juice. Fold this into the wet mixture. Once combined, add the rest flour and fold well.

6.     Add the soaked dried fruits and fold them well!

7.     Grease a 7" cake tin. add the cake batter to it.

8.     Bake in a preheated oven at 180 C for 30-35 mins.

SERVING

9.     Let it cool and enjoy!
