Wild Duck with Red Cabbage

Wild duck 3 Pound (1 Duck, 2
Red cabbage 1 1/2 Pound (1 Small Sized, 1
Onions 3
Vinegar 2 Tablespoon
Water 2 Tablespoon
Cooking apples 4
Sugar 1 Teaspoon (Leveled)
Oil 2 Tablespoon
Caraway seeds 1 Teaspoon
Stock 1/4 Pint
Chopped parsley 1 Tablespoon



1. To prepare cabbage shred cabbage very finely discarding any hard stem.

2. Cut duck into 4 pieces.


3. Chop onion and mix with cabbage.

4. Take a casserole butter well and put in vinegar, water and seasoning.

5. With cover cook in oven for 1 hour.

6. Add sliced apples and a little sugar and cook for 15 minutes more.

7. In a pan heat 2 tablespoons oil brown pieces of duck all over, remove and place on top of cabbage in casserole.

8. In the empty pan cook sliced onions in remaining oil until soft without browning.

9. Sprinkle in caraway seeds and add a little stock.

10. Add seasoning, pour over pieces of duck and return to oven for 30-40 minutes, until tender.

11. Scrape onion mixture off duck and mix it well into red cabbage.

12. On top of cabbage arrange duck pieces and sprinkle with chopped parsley.


13. Serve hot, with mashed potatoes and redcurrant jelly.
