Salt | 1/2 Teaspoon | |
Lemon juice | 1 Tablespoon (from 1/2 lemon) | |
Hot chili oil | 1 Dash (for drizzling) | |
Sliced strawberries | 1 Cup (16 tbs) | |
Chopped pecans | 1/2 Cup (8 tbs) | |
Sliced orange bell pepper | 1/2 Cup (8 tbs) | |
Sliced cherry tomatoes | 1/2 Cup (8 tbs) | |
Radicchio leaves | 3 | |
Crumbled queso fresco/Feta | 1/2 Cup (8 tbs) (optional) | |
For dressing: | ||
Vinegar | 1 Tablespoon (apple cider or wine or balsalmic) | |
Honey | 2 Teaspoon | |
Black pepper | 1/2 Teaspoon | |
Olive oil | 2 Tablespoon | |
Yellow mustard | 1 Teaspoon | |
Deli mustard | 1 Teaspoon |
MAKING:
1.In a bowl, put kale and sprinkle salt, lemon juice, oil and toss well. Rub kale for 2-3 minutes.
2.Add strawberries, kale, radicchio, bell pepper, cherry tomatoes and mix well.
3.In a small bowl, combine mustards, vinegar, honey, black pepper, olive oil and whisk well.
4.Pour over salad and toss well.
