Raspberry vinegar | 6 Tablespoon | |
Salt | 1 Teaspoon | |
Onion | 1 Small | |
Lard | 4 Tablespoon | |
Pear juice | 700 Milliliter | |
Pears | 3 | |
White sugar | 2 1/2 Tablespoon |
GETTING READY
1. Mix raspberry vinegar, peppercorns, juniper berries and red cabbage together. Place it in the refrigerator for 4 hours.
MAKING
2. Heat pig lard in a dutch oven. Saute a small onion and garlic.
3. Add sugar and mix that in. Let it caramelize and then add the red cabbage.
4. Once the red cbbage is a little done, pour pear juice and mix that in.
5. Close the lid of the dutch oven and place the briskets on top.
6. Let the cabbage cook for about an hour then add pear and cook further for 20 minutes. Remove the lid and let the cabbage cook for about 10 minutes such that some of the pear juice evaporates.
SERVING
7. Serve this delicious red cabbage side dish with the mains of your choice. Enjoy.
