Put a twist on the traditional beef burger by creating these delicious sweet potato burgers with YouTube chef Barry Lewis. Perfect for dinner with the children or on a BBQ this summer.
Sweet potato | 1 Large , peeled, cut into disc shapes | |
Red onion | 1/2 , finely chopped | |
Garlic | 1 Clove (5 gm) , chopped | |
Fresh coriander | 1/4 Cup (4 tbs) , chopped | |
Ground black pepper | 1 Pinch | |
Smoked paprika | 1 Teaspoon (heaped) | |
Panko bread crumbs | 50 Gram | |
Sweetcorn | 2 Tablespoon | |
Wholemeal baps | 2 | |
Burger buns | 2 | |
Tomato chutney/Any sauce | 1 Tablespoon | |
Olive oil | 2 Tablespoon | |
Rocket salad | 1 Tablespoon | |
Avacado | 1 |
GETTING READY
1.In a microwave safe bowl place the sweet potatoes. Microwave until soft. Once done mash it with a fork.
2.Add garlic, paprika, coriander,red onion, pepper,sweetcorn and bread crumbs and mix it well.
3.Shape the mixture into patties and refrigerate for awhile for setting.
MAKING
4.In a pan toast up burger buns with no oil. Once removed from the pan spread tomato chutney on it.
5.Heat olive oil in the same pan.
6.Fry the patties.
SERVING
7.Take one slice of burger bun, place the patty on it, rocket salad leaves, avocado and finally place the second slice of burger bun on top.
