Bison Burger with a Sweet Onion Jam

This weekend I was attempting to make a burger I had years ago that was called a Red Eye burger. Well, I ended up going in a different direction with the delicious Bison burger with a onion jam.

Ingredients

For patties
Bison meat 1/2 Pound , ground
Ground coffee 1 Tablespoon
Brown sugar 1 1/2 Teaspoon
Paprika 1 Teaspoon
Salt 1 Teaspoon
Pepper 1 Teaspoon
Thyme 1/2 Teaspoon
For onion jam
Onion 2 Medium , sliced
Unsalted butter 1 Tablespoon
Sugar 1/2 Cup (8 tbs)
Dry red wine 1/3 Cup (5.33 tbs)
Grenadine 1/3 Cup (5.33 tbs)
For burger
Burger buns 2 , cut into half horizontally
Cheddar cheese slices 4 Medium
Butter lettuce leaves 4
For serving
Corn on the cob 5

Directions

GETTING READY

1. SPICE MIX: In a small bowl, add coffee, brown sugar, paprika, salt, pepper and thyme. Mix well. Set aside.

2. Take a jar lid of desired size. Place a plastic sheet over it. Put the ground meat into the lid and shape it easily into patties. Transfer this onto a plate or foil and refrigerate it till used.

3. ONION JAM: In a pan heat unsalted butter on medium heat. Add the onion slices and sauté them till translucent for around 10 minutes.

4. Add the sugar, red wine and grenadine, mix well and cook on medium high heat for around 40 minutes or till the sauce is reduced and onions are soft (should look like a jam). Set aside.

5. Preheat the barbecue using charcoal.

MAKING

6. Take the burger patties from the refrigerator and season it on one side with the spice mix.

7. Place it on the preheated barbecue over direct flame, seasoned side down. Sprinkle the mix on the other side as well. Cook until seared on both sides and then transfer them to indirect heat.

8. Place the corn on the cob, burger buns along with the patties. Put the cheese slices on the patties. Cover the barbecue and continue to cook for around 3 minutes. Remove from the heat.

9. BURGER: Place the patties with melted cheese on the burger buns. Spread the onion jam all over it and put the lettuce on top. Place the other half of the bun to complete the burger.

SERVING

10. In a serving plate, serve the burger warm with the grilled corn or fries or chips and any beverage of choice.
