Italian Lolli-Burger

Is there anything more festive than finger foods? Scallions, brandy and fresh oregano combine to create a depth of flavor that will make your taste buds sing! In Italy I've seen similar dishes served with roasted eggplant on the side but my family prefers a fresh arugula and tomato salad instead! Give these a try you'll find the dinner table conversation kicked up a notch when everyone is holding an Italian Lolli-Burger in their hand!


Ground sirloin 1 Pound
Ground pork 1 Pound
Pancetta slices 12 Medium (or 6 slices bacon)
Green onion 3 Medium , chopped
Fresh oregano 2 Tablespoon , chopped
Parmesan cheese 1 Cup (16 tbs) , grated
Italian breadcrumbs 1 Cup (16 tbs)
Brandy/Apple juice 1 Tablespoon
Salt 1 Teaspoon
Pepper 1 Teaspoon
Egg 1 Large , beaten
Olive oil 1 Tablespoon



1. Soak 12 wooden skewers in warm water for 20-30 minutes.

2. Preheat the oven to 375°F.


3.Mix all the ingredients together leaving pancetta and olive oil.

3.Make 12 sausages using four tablespoons each of the sausage mixture.

4.Insert the skewer from bottom to top into each lolli-burger.

5.Wrap the sausages with a slice of pancetta or 1/2 a slice of bacon.

6.Drizzle olive oil on them.

7.Place all of them on a baking sheet

8.Bake in the oven until cooked.


9.Serve steaming hot from the oven, on the stick, with your favorite condiments.
