For the blondies: | ||
All purpose flour | 1 Cup (16 tbs) | |
Baking powder | 1/2 Teaspoon | |
Baking soda | 1/4 Teaspoon | |
Salt | 1/4 Teaspoon | |
Cinnamon | 1 Teaspoon | |
Ground nutmeg | 1 Pinch | |
Melted butter | 5 Tablespoon (just under ⅓ cup) | |
Brown sugar | 3/4 Cup (12 tbs) | |
Granulated sugar | 1/4 Cup (4 tbs) | |
Egg | 1 | |
Vanilla extract | 2 Teaspoon | |
For the sugar topping: | ||
Granulated sugar | 1 Tablespoon | |
Cinnamon | 1/4 Teaspoon | |
For the glaze: | ||
Confectioners' sugar | 3/4 Cup (12 tbs) , sifted | |
Cream cheese/Milk | 2 Tablespoon | |
Vanilla extract | 1/2 Teaspoon |
GETTING READY:
Preheat oven to 350°F/180°C.
Grease baking pan with butter and line with parchment paper.
MAKING:
In a bowl, cream together butter and sugar until light and fluffy. Add eggs, vanilla extract and whisk well.
In another bowl, combine flour, baking soda, baking powder, salt, nutmeg, cinnamon and mix well.
Add to butter mixture and whisk well. Spread mixture evenly onto the pan.
In a small bowl, mix together sugar and cinnamon. Sprinkle the mixture over the mixture in baking pan.
Pop into oven and bake for 20-25 minutes until golden brown. Once done, allow to cool completely.
For glaze, whisk together confectioners’ sugar, cream cheese and vanilla extract in a small bowl.
Drizzle over cooled blondies and cut into squares.
