The key is cutting up the broccoli into evenly sized pieces - and allowing it to cook without stirring too often.

GETTING READY
1. In a small bowl, combine water, salt, and pepper. Stir well.
2. Cut broccoli florets into 1½-inch pieces, and cut stems into ¼-inch thick slices.
3. Chop up bacon and set aside.
MAKING
4. Heat a 12-inch pan with a tight-fitting lid over medium high flame. Add chopped bacon and cook just until starting to brown.
5. Add broccoli stems and cook just until starting to brown on bottom.
6. Add broccoli florets and toss to combine. Continue cooking without stirring, until the bottom side of the florets begins to brown.
7. Add salt water mixture, cover; steam /cook for about 2 minutes or until broccoli is bright green but still crisp.
8. Uncover and cook for another 2 minutes or until water evaporates.
