Multigrain Bread: Gluten- Free and Vegan

One word: YUM! Gluten- free, vegan bread has never tasted so good without.. well, gluten, and eggs! It's also rice- free, high-fiber, high-protein and lasts a week in the fridge or longer in the freezer until you want a slice. This one's a winner!

Ingredients

Vegan butter 1 Tablespoon (For greasing)
For yeast mixture
Dry yeast 2 3/4 Teaspoon (2 1/2
Warm water 1 Cup (16 tbs)
Maple syrup 1 Tablespoon
For flour mixture
Gluten free oat flour 1 1/3 Cup (21.33 tbs)
Millet flour 1 Cup (16 tbs)
Almond flour/Coconut flour 1 Cup (16 tbs)
Buck wheat flour 1 Cup (16 tbs)
Tapioca flour 2 Tablespoon
Quinoa flour 1/2 Cup (8 tbs)
Salt 1 Teaspoon
Xantham gum 1 Teaspoon
For egg replacer
Egg replacer 3 Teaspoon (as per package instruction equal to 3 eggs)
Sunflower oil 1 1/2 Teaspoon
Warm water 6 Tablespoon
Other ingredients
Sunflower oil 1/4 Cup (4 tbs)
Warm water 1 Cup (16 tbs) (as needed)
Rolled oats 1 1/2 Tablespoon (Gluten free)

Directions

GETTING READY

1. Line a 9-inch loaf pan with parchment paper and grease with butter.

2. In a cup, mix warm water, yeast and maple syrup. Set aside until bubbly.

3. Preheat oven to 350 degree F.

MAKING

4. In a large mixing bowl, combine oat flour, millet flour, almond flour, buck wheat flour, tapioca flour, salt, and xantham gum. Mix well.

5. In a bowl, combine egg replacer, 6 tablespoons of warm water, and oil. Whisk until nice and foamy.

6. Make a well in the middle of the flour mixture pour the yeast mixture, the egg replacer mixture and ¼ cup of sunflower oil. Mix to combine, scraping sides as needed. Add more water if needed.

7. Into the prepared pan, transfer the dough and spread evenly with damp finger. Dampen the top with water and sprinkle oats. Cut the parchment, if any hanging around the sides.

8. Cover with damp cloth and place in warm oven to rise, about 25-45minutes.

9. Pop in oven and bake for 30-45 minutes at 350 degree F. Remove from oven, place on wire rack and let cool.

SERVING

10. Cut into slices and serve!
