Cooked spinach 1 Cup (16 tbs) , chopped, cooked, well drained
Grated parmesan cheese 1/2 Cup (8 tbs)

1. Preheat oven to 350 degree F.

2. Generously butter a loaf pan and set aside.

3. In a large mixing bowl, combine all purpose flour, whole wheat flour, baking powder, salt, Italian seasoning, garlic powder, and cayenne pepper. Mix well.

4. In a separate bowl, place eggs and whisk for about 1 minute or until foamy. Add milk, olive oil, tomato, onion, and spinach. Mix well.

7. Pop the pan in oven and bake for 35-40 minutes or until the bread is golden and a toothpick inserted into the center comes out clean.

8. Transfer the pan to a cooling rack and wait for about 3 minutes, then run a knife around the sides of the pan and turn the loaf over the rack; invert and cool right side up.

9. Slice, spread butter and serve with soup.
