Spinach Tomato and Onion Quick Bread

Spinach Tomato and Onion Quick Bread is a beautiful accompaniment to winter soups and stews and summer salads. It makes a lovely bread course when entertaining and can even be used to make sandwiches!

Ingredients

Butter 1 Teaspoon (For greasing)
Dry ingredients
All purpose flour 1 Cup (16 tbs)
Whole wheat flour 3/4 Cup (12 tbs)
Baking powder 1 Tablespoon
Salt 1 Teaspoon
Italian seasoning 1 Teaspoon
Garlic powder 1 Teaspoon
Cayenne pepper 1/4 Teaspoon
Wet ingredients
Eggs 3 Large (at room temperature)
Milk 1/3 Cup (5.33 tbs) (at room temperature)
Extra virgin olive oil 1/3 Cup (5.33 tbs)
Cubed tomato 1/2 Cup (8 tbs) (with seeds)
Diced white onion 1/2 Cup (8 tbs)
Cooked spinach 1 Cup (16 tbs) , chopped, cooked, well drained
Grated parmesan cheese 1/2 Cup (8 tbs)

Directions

GETTING READY

1. Preheat oven to 350 degree F.

2. Generously butter a loaf pan and set aside.

MAKING

3. In a large mixing bowl, combine all purpose flour, whole wheat flour, baking powder, salt, Italian seasoning, garlic powder, and cayenne pepper. Mix well.

4. In a separate bowl, place eggs and whisk for about 1 minute or until foamy. Add milk, olive oil, tomato, onion, and spinach. Mix well.

5. Pour the wet ingredients over the dry ingredients and gently mix until the dough just comes together.

6. Stir in the cheese and transfer the mixture into the buttered pan. Smooth out the top.

7. Pop the pan in oven and bake for 35-40 minutes or until the bread is golden and a toothpick inserted into the center comes out clean.

8. Transfer the pan to a cooling rack and wait for about 3 minutes, then run a knife around the sides of the pan and turn the loaf over the rack invert and cool right side up.

SERVING

9. Slice, spread butter and serve with soup.
