Chocolate Chip Zucchini Bread

So I wanted to break in my new Kitchen Aid mixer and decided to throw together a zucchini bread with some chocolate.


Zucchini 1 1/2 Cup (24 tbs) , shredded
All purpose flour 1 Cup (16 tbs)
Unsweetened cocoa powder 1/2 Cup (8 tbs)
Baking soda 3/4 Teaspoon
Baking powder 1/4 Teaspoon
Salt 1/4 Teaspoon
Ground cinnamon 1/4 Teaspoon
Semi sweet chocolate chip 3/4 Cup (12 tbs)
Egg 2 Large
Cooking oil/Canola oil /safflower oil /corn oil / vegetable oil 1/2 Cup (8 tbs)
Granulated white sugar 1/2 Cup (8 tbs)
Firmly packed light brown sugar 1/2 Cup (8 tbs)
Pure vanilla extract 1 Teaspoon



1. Preheat the oven to 350F.

2. Spray a baking pan with cooking oil.


3. In a mixing bowl, break the eggs, add oil, sugar, vanilla extract, using an electric mixer, mix well. Add zucchini, flour,cocoa powder, baking soda, baking powder, salt cinnamon, chocolate chips,mix again.

4. Pour the mixture into the baking pan. Bake at 350F for 50 to 60 minutes. Allow to cool.


5. Cut into pieces and serve with your choice of beverage.
