Whole wheat flour 1 1/2 Cup (24 tbs)
Baking powder 2 Teaspoon
Vietnamese cinnamon 2 Teaspoon
Evaporated cane juice/Sugar 1/4 Cup (4 tbs)
Unsweetened shredded coconut 1 Cup (16 tbs)
Chopped walnuts 1 Cup (16 tbs)
Dried apricots 1 Cup (16 tbs) , chopped
Shredded carrot 1/4 Cup (4 tbs)
Mashed bananas/Mashed sweet potatoes 1 Cup (16 tbs) (2 Medium sized bananas used)
Applesauce 1 Cup (16 tbs) (Homemade applesauce used)
For greasing the baking dish
Oil 2 Dash (For greasing)



1. Preheat oven to 350 F.

2. Lightly grease a baking dish with oil and set aside.


3. In a large mixing bowl, combine wheat flour, baking powder, cinnamon and evaporated cane juice sugar.

4. To this, add walnuts, dried apricots, shredded carrot, mashed bananas and applesauce. Mix thoroughly until you get a thick paste like batter.

5. Transfer this batter to the greased baking dish and spread evenly.

6. Bake in the preheated oven for 25 minutes or until done.

7. Once done, allow it to cool slightly before serving.


8. Slice and serve.
