Whole Wheat Cocoa Mini Breads

For first time fresh bread bakers, this recipe is a keeper. It is 100 whole wheat hence this is not the soft burger bun kinds. With little or no added sugar and with cocoa flavor, these mini breads are perfect to team with your favourite soups and stews. Hard on the outside and soft on the inside, a bit of chili seasoning has worked wonders in the taste. Give it a try and you will not be disappointed!


Whole wheat flour 1 Cup (16 tbs)
Active dry yeast 3/4 Teaspoon
Honey 1/2 Tablespoon
Cocoa powder 1 Tablespoon
Red chili flakes 1/2 Teaspoon
Olive oil 1 Tablespoon
Salt To Taste
Milk 1 Tablespoon
Flax seed 1 Tablespoon
Water 1/2 Cup (8 tbs)



1. Mix together honey and yeast in ¼ cup of water; keep aside for 10 minutes

2. In a mixing bowl, mix together ingredients other than milk and flax seeds.

3. Pour the yeast mixture and knead the flour into dough like consistency. Add water ¼ water or as needed to get slightly sticky dough.

4. Form into a ball, rub with oil and keep covered in oiled bowl for at least 4 hours or until the dough has doubled in size.


5. Slightly deflate the dough and divide it into 3 portions. Form these into smooth balls and brush milk over. Sprinkle with flax seeds. Leave to rise for another 20 minutes or so.

6. In the meanwhile, preheat oven to 180 degree Celsius.

7. Line a baking sheet with butter paper and bake for about 20-25 minutes or until done.


8. Cut bread into half and serve with hot melted butter or you may even use these as sides for soups and stews.
