Banana and Sultana Bread

Ingredients

Self raising flour 7 Ounce (200 g)
Bicarbonate of soda 1/4 Teaspoon
Butter 2 3/4 Ounce (75 g)
Sugar 2 3/4 Ounce (75 g)
Honey 1 Tablespoon
Eggs 2 , beaten
Ripe bananas 2 , mashed
Sultanas 3 1/2 Ounce (100 g)
Low fat cooking spray 1

Directions

GETTING READY

1. Preheat oven to 160°C.

2. Spray low fat cooking coil in the tin base.

MAKING

3. In a large bowl sieve bicarbonate of soda and flour.

4. In a separate bowl cream honey, sugar and butter. Add additional sugar to make it fluffy and light.

5. Combine eggs slowly while beating.

6. Stir the flour in the mixture.

7. Add sultanas and mashed bananas.

8. Pour the mixture in the prepared tin.

9. Bake for 60 minutes till firm.

10.Cool. Wrap and store.

FINALIZING

11. Serve bread warm.
