Buttermilk Brown Bread with Raisins

Ingredients

Whole wheat flour 1 Cup (16 tbs)
Cornmeal 1 Cup (16 tbs)
All purpose flour 1 Cup (16 tbs)
Baking powder 2 Teaspoon
Baking soda 1 1/2 Teaspoon
Salt 1 Teaspoon
Buttermilk 2 Cup (32 tbs)
Molasses 3/4 Cup (12 tbs)
Shortening 2 Tablespoon , melted
Raisins 3/4 Cup (12 tbs)

Directions

MAKING

1) Into a bowl mix together the flour, cornmeal, all purpose flour, baking powder, soda, buttermilk, molasses and shortening

2) Using an electric beater, beat well to mix

3) Add in the raisins and mix well

4) Pour the batter into 2 greased 13 ounce coffee cans

5) Cover cans with double thickness of aluminum foil

6) Secure with string

6) Place the cans into a deep kettle and add water of 1 inch depth

7) Cover the kettle and steam the bread for about 3 hours, taking care to add water if necessary

8) Take out the bread from the cans and cool for 10 minutes

SERVING

9) Serve the bread with some butter and jam
