White sugar 1 Teaspoon
Yeast 2 Tablespoon (2 Envelopes)
10 grain cereal 2 Cup (32 tbs)
Soy grits/Other favorite seeds 1/4 Cup (4 tbs)
Salt 2 Tablespoon
Brown sugar/Molasses 1/4 Cup (4 tbs)
Warm milk 2 Cup (32 tbs)
Warm water 2 Cup (32 tbs)
Butter/Bacon grease 1/4 Cup (4 tbs)
Flour 6 Cup (96 tbs) (White And Whole Wheat)


Stir water, sugar and yeast together and set aside.

In a large bowl, combine grains, seeds, salt, sugar, liquid and fat.

Stir until well mixed.

Stir yeast mixture in lightly.

Add the flour slowly—each batch requires a slightly different amount, as the humidity of your kitchen varies each time.

Add until you can stir no longer, then turn it out on a floured board and knead it until it is as smooth as a baby's bottom.

Place dough in a greased bowl, turn to grease top and cover with a towel to protect from drafts.

Let rise in warm spot about 1 hour—until doubled in size.

Turn out, shape into 3 loaves, place in greased tins and let rise till doubled again.

Bake at 400°F for about 30 minutes.
