Apple Nut Coffee Bread

Ingredients

All purpose flour 1 1/2 Cup (24 tbs)
Baking powder 1 Teaspoon
Baking soda 1/4 Teaspoon
Peeled shredded apple 1 1/4 Cup (20 tbs) (2 Medium Sized)
Packed brown sugar 2/3 Cup (10.67 tbs)
Instant coffee crystals 1 1/2 Teaspoon
Egg 1 , beaten
Cooking oil 3 Tablespoon
Chopped walnuts 1/4 Cup (4 tbs)
Nonstick spray coating 1

Directions

Stir together flour, baking powder, and soda, then set aside.

In a large bowl combine apple, sugar, and coffee crystals; let stand 5 minutes, stirring once.

Add egg and oil; mix well.

Stir in flour mixture just till combined.

Fold in nuts.

Spray an 8 x 4 x 2-inch loaf pan with nonstick coating, then pour in batter.

Bake in a 350° oven about 50 minutes or till a toothpick inserted near the center comes out clean.

Cool in the pan for 10 minutes.

Remove from pan, then cool thoroughly on a rack.

Wrap and store overnight before slicing.
